Made exclusively with sheep's milk (minimum 70%) and goat's milk from farms in Basilicata, it takes its name from the rush baskets ("canestrat") in which it is pressed, leaving their distinctive weave imprinted on the rind. Its true magic lies in the ageing process, which takes place exclusively in the traditional "fondaci" (historic cellars) of the town of Moliterno: underground stone cellars, cool and humid, with a unique microclimate where the cheese breathes and matures, developing aromas unlike anywhere else.

Perfect as an aperitivo or snack, as well as on the cheese board: excellent paired with honey or fig jam, and outstanding grated over traditional Lucanian pasta dishes (such as "trascinati"). It pairs beautifully with full-bodied red wines, first and foremost Aglianico del Vulture.
